Due to varying dietary needs, it is the responsibility of the user
to determine if the recipes and ingredients are safe for
individual consumption.
This recipe was not created to compete with Häagen Dazs nor will
it put Baskin-Robbins out of business anytime soon. However, this
recipe is pure delight that will send squeals of joy through
households suffering from dual dairy and soy allergies, or those
with severe peanut or tree nut allergies unable to find a safe
brand of ice cream.
1 medium vanilla bean (optional)
4 cups rice milk
1 cup sugar
1 teaspoon vanilla extract
2 tablespoons canola oil
¾ teaspoon xanthum gum
2 tablespoons light corn syrup
Instructions
1. Scrape the seeds from the vanilla bean (optional).
2. Heat the rice milk, sugar, vanilla extract, and the optional
vanilla seeds in a small saucepan only until the sugar is
dissolved. Remove from heat, transfer to a bowl, and chill in the
refrigerator for at least 3 hours.
3. Whisk together the oil and xanthum gum. Pour the chilled rice
milk mixture into a blender; add oil with xanthum gum and corn
syrup. Blend until well mixed.
4. Transfer the mixture to an ice cream maker and mix according
to the manufacturer's directions. Serve immediately or spoon ice
"dream" into a freezer container and freeze for a few hours before
serving.
Recipe Notes
T: Rice milk is actually a grain milk, made from a combination of
brown rice and water. It has a light,
slightly sweet flavor that substitutes well for low-fat or
fat-free cow’s milk. Rice
milk is considered an acceptable option suitable for those who are
lactose-intolerant. Rice milk can also be used as dairy
substitutes for
coffee
creamers and ice creams. Some brands are even fortified with
essential
vitamins.
Due to the low fat content, it is generally not acceptable for
infants as a replacement for milk or formula. However the low fat
may be beneficial for those watching fat intake.
